LATEST figures from the Trussell Trust show a record increase in foodbank figures from April 2017 and March 2018.
Between those dates,The Trussell Trust's foodbank network distributed 1,332,952 three day emergency food supplies to people in crisis, a 13% increase on the previous year.
After hearing the statistics, Bushmills woman Kathryn Stewart, who is a dietitian and often advises clients who may be on the breadline, decided to set herself the £1 a day challenge.
Speaking to The Chronicle, Kathryn, who also has a Masters in Sports Nutrition and works with a County Gaelic team, explained why she wanted to undertake such a rigorous challenge.
